This smooth artichoke sauce, made with just three ingredients is insanely flavoursome and quite unlike almost anything else I’ve cooked with. It makes a simple pasta dish feel so elevated, it’s a restaurant-style finish I find. I love it with sauteed mushrooms or slow cooked courgettes, both with a little garlic, then lots of black pepper to finish, and sometimes a little lemon zest too. P.S when you use the artichoke sauce with pasta, make sure to use pasta water too, that’s how you get a silky, glossy, creamy finish. Simply add half a mugful or so of pasta water to the drained pasta and artichoke sauce, stirring it altogether for a minute or so, until it coats the pasta perfectly.
