Hope you’re all well. It’s been a little while since I wrote a Deliciously Ella newsletter and I’m so happy to be back sharing these with you. We’re planning to make them more regular again, so I can share a little of what tools, tips, tricks and recipes are helping me make healthy habits a little easier (and of course more delicious!).

I’m not sure about you guys, but I’m loving being back in more of a routine again post-summer holidays. It all got a little chaotic in our house by the end of the kids’ break from school! I'm also secretly enjoying the rain and the cooler days. That being said, I’m needing to be a little more organised and on top of everything again, so these are the things I’m turning to at the moment.

1. My go-to veggie stew

I’ve been making this recipe for years for a reason. It’s so easy, it batch cooks brilliantly and everyone enjoys it. I mix it up all the time depending on what I have in the house, using black beans sometimes instead of chickpeas, adding different base veggies, e.g. finely sliced leeks or diced courgette etc.

It’s great turned into a soup-y dish with yoghurt and chilli oil for a quick WFH leftovers lunch, tossed through pasta or loaded onto jacket potatoes. It’s just one of those recipes I come back to again and again because it makes life so much easier.

Ella’s Family Veggie Stew

I make a variation of this simple veggie bean stew for my family every week, and I have a feeling you’ll be making this on repeat too. It’s packed full of plant-based protein and comforting vegetables, as well creamy coconut milk and nutrient-rich spinach. It keeps well in the fridge (or freezer), making it the perfect prep-ahead meal for a busy week.

2. Batch-making chia pudding

I’m batch-making a couple of days at a time and it’s doing wonders for my digestion. Only 4% of us in the UK manage to get our recommended daily fibre intake and if you’re struggling, this is amazing as you get 50%+ of your daily fibre in one go! Plus it only takes 2–3 minutes to pull together, you can make a few portions in one go and take it with you if you’re rushing out of the house. I mix and match which fruit I use, but at the moment I love adding frozen blueberries (they also make it a lovely colour).

3. A sleep soundscape

We moved house over the summer and it really affected my sleep. For a few weeks I felt almost jet-lagged, like my body had decided 4am was the morning, which was not ideal!

I started using this soundscape and it helped so much. It’s incredibly calming and helps my mind just drift off. It’s the soothing soundscape, by Cloud Chorus, and it goes on for two hours, so really hooks you up when your mind is busy and sleep feels far away.

4. A 20-minute yoga flow

I’ve been easing back into exercise and loving this simple 20-minute flow. It’s a Morning Motivation Flow with Lisa, whose classes I used to go to all the time when we both lived in London. She also gave me my first yoga teaching job!

Anyway, it’s a great all-rounder to stretch everything out and just feel a bit more aligned and energised. I’m finding 20 minutes feels very doable at the moment too, which always helps.

5. Blackberry & apple crumble

We’ve been picking blackberries like there’s no tomorrow over the last few weeks! Next year I’m definitely going to make blackberry jam/jelly. My mum makes it every year and it’s about my favourite thing in the world, but for now I’m sticking with my trusted blackberry & apple crumble for Sunday lunches at home.

It’s just the most delicious, cosy pudding and feels very right for this time of year.

There’s nothing more comforting than a cosy crumble on a cold evening and this one brings together tart apples, sweet blackberries and a crunchy topping of oats and ground almonds. Naturally rich in fibre and healthy fats, it’s as nourishing as it is delicious. We love it with plant-based custard or ice cream.

6. Little wins wherever you can get them

When life is busy, take the easy wins! This week it's been a sprinkling of hemp seeds onto quick, everyday things, e.g. peanut butter and jam or avocado toast, smoothies, chia bowls etc. Such an easy way to get a little more protein, fibre and omega-3s in without really doing anything differently.

So that’s my little September reset. Nothing radical or groundbreaking, just the little things that are helping me get back into a routine and feel good again. I think more and more that it’s these tiny things that make the biggest difference, the things that are actually easy enough to keep doing when life gets busy.
