We made this with our courgette ribbon tacos and guacamole for a Mexican feast in the office, and this has been a hit ever since. It’s a lovely addition to summery salad spreads, as well as bean chillies - I love the sweetness it brings to the plate. For something simpler, serve this with some black rice or quinoa. It’s a quick and easy supper, but it tastes amazing.

This salsa is best enjoyed fresh, but will last a couple of days if sealed in an airtight container and kept in the fridge.
