I love this as an alternative to hummus and guacamole, especially in the cooler months of the year. The mix of artichokes, cashews, tahini, spinach, almond milk, lemon and salt is wonderful! As it bakes, all the flavours really mix together, enhancing each bite. I love dunking crunchy corn chips into the piping hot tray as soon as it comes out the oven.
