This quick and easy hummus is made extra filling and satisfying with the addition of a whole baked sweet potato.
You can also use a microwave instead to save time. Just prick the sweet potato all over with a fork and place in a microwave-safe bowl with 1 teaspoon water and cover. Microwave on high until tender when pierced with a fork, about 5 minutes. Let cool. Discard water. Split potato and scoop flesh into bowl; discard skin.
