This harissa butter beans on toast is the ultimate simple breakfast recipe packed full of flavour. The creamy harissa sauce tastes delicious mixed with the garlicky fried butter beans. We love to serve this on some toasted sourdough, with a pinch of chilli flakes and some fresh parsley.

2 medium slices good-quality sourdough bread
2 cloves garlic
peeled & chopped
0.5 tablespoon harissa paste
240 g canned butter beans
1x 400g can drained
2 tablespoons coconut yoghurt
(or any plant-based yoghurt)
1 lime
juiced
pinch of sea salt
drizzle of olive oil
Method:

Warm a generous drizzle of olive oil in a shallow pan or saucepan set over medium heat; add the garlic and harissa, and cook for 2–3 minutes until fragrant

Pour in the butter beans, along with a splash of water and cook for 5–7 minutes until bubbling.

Remove the pan from the heat, stir in the yoghurt and squeeze over the lime juice. Season to taste with salt and plenty of black pepper.

Meanwhile, toast the bread and divide between plates. Spoon the butter beans on top and add your favourite toppings; we love a pinch of chilli flakes, sliced avocado and a handful of fresh herbs.
